Green Curry Noodles

Ingredients

  • 1 packet of noodles
  • Small chopped onion
  • Butter
  • Olive Oil
  • 2 diced chicken breasts
  • Garlic Salt
  • Pepper
  • 5 garlic cloves
  • Cilantro
  • 1 Green Chili
  • 1/2 tsp Turmeric
  • 1 Chicken Knor Cube
  • 1/2 tsp ground cumin
  • Lemon Juice
  • 1 can of Coconut Milk

Instructions

  1. Boil one packet of noodles according to the instructions on the packet. Save 1 cup of the pasta water you boiled the pasta in.
  2. Sauté  a small chopped up onion in some butter and olive oil. When soft, add 2  chicken breasts (diced). When the water dries, you can season the  chicken with some garlic salt and pepper. Let it slightly change colour  and remove from heat. You want a little liquid left, not a lot. 
  3. In  the same pan add a table spoon of olive oil, and sauté 5-5 cloves of  chopped up garlic. Add 1 1/2 tsp of green curry paste(I use Mae ploy).  More if you like a spicy kick.
  4. Blitz a big bunch of dhania (cilantro)  and 1 green chili (eliminate if your kids don’t like it) in a food processor with a some water…. you want it to be a paste and add it to the pan.
  5. Add 1/2 tsp of turmeric, 1 chicken knor cube, pepper, 1/2 tsp  of ground cumin juice of a lemon and bhunofy for a 1-2 minutes.
  6. Add the chicken back in with about 1 can of coconut milk or if you want to be  naughty then coconut cream.
  7. Adjust seasonings.
  8. Now add the noodles. And about 1/2 a cup of the pasta water. Mix it all together till the sauce coats the noodles.
  9. Put in a bowl, add crispy toppings. My favourite are of course chili chips and fried garlic.
