This is cucumber salad is super refreshing. You can have this with almost any Asian themed meal. Salad toppers or even as a side dish at a BBQ.

Ingredients

- 8 Persian cucumbers, sliced in to 1 inch slices
- 1 tsp of salt
- 1 tsp of sugar
Dressing:
- 3.5 tbsp of rice vinegar
- 3 tbsp of cold water
- 4 cloves of thinly sliced garlic
- 1.5 tbsp of honey
- 2 tbsp of sweet chili sauce
- 2 tbsp of Sambal Olek
- 1 tsp of brown sugar
- 1 tbsp of chili oil
- 1 tbsp of soy sauce
- 1 tbsp of fish sauce
- Juice of 1/2 a lime
Garnish:
- 1 tsp of toasted Sesame oil before serving
- 1 tbsp or more of roasted crushed peanuts
Instructions
Sprinkle the salt and sugar over the cucumber, mix and let it sit for 30 minutes. The cucumbers will release its moisture, drain them and wash them. Mix all the dressing ingredients and pour over the cucumbers. Mix well and set aside to chill for 4-5 hours. Before serving, add the sesame oil and sprinkle the crushed peanuts. I also like adding birds eye chili over the top for added heat.
