It’s football season and if you’re like us – a snacker family, you need to try these out. You can get super creative with the toppings here. I love making nachos when I have a bunch of leftover veggies and meat that needs to be used up. It’s the perfect weeknight dinner.

- 1 bag of Corn chips ( you can use any corn chips or blue corn chips here)
- 3 cups of shredded cheese (1/5 mozzarella and 1/2 cheddar)
- 1.5 cup of leftover cooked chicken
- 1 cup of corn
- 1/2 cup of diced red onion
- 1/2 cup of chopped tomatoes
- Olives (optional)
- 2 tbsp of any taco seasoning (you can google how to do a homemade version also)
Toppings
- cilantro
- Tajin (chili lime seasoning)
- 1/2 cup of sour cream
Optional
- Smashed avocados with sea salt
- Peach or mango salsa
Instructions
- Set your oven to 350. Line a tray with chips (to your liking, you can make this in 2 layers)
- Lay over 1/2 the cheese cheese, do this so that the chips don’t get soggy. Sprinkle 1 tbsp of taco seasoning over. Now lay all the ingredients step by step.
- Top with the remaining cheese & Bake for about 10 mins or till you see the cheese has melted (took me 12 mins)
- Now top with your favorite toppings. I’ve used cilantro, and sour cream. Don’t skip on the sour cream. Its essential.
- Sprinkle Tajin
- Add in your fave salsa if you’d like
- Eat immediately. It’s so good
