I grew up in a family where sandwiches had to be at every get together. Picnic, Birthdays, Iftar, people coming over, were going over to someones house… We made sandwiches. We take our sandwiches very seriously around here. Hence my love for a platter of sandwiches is lifelong. It’s one I hope to pass on to my children. After all it’s tradition and who am I to break tradition.
These are my easy home style chicken sandwiches. The delicious fresh flavor in these ones are the addition of greek yogurt which is courtesy my cousin (yes we even talk about sandwiches on the phone). And she wasn’t wrong – these take regular sandwiches from good – to excellent. Sandwich bread here matters. It always matters. I highly recommend getting sour dough for these ones. Of course if its not available to you. Please find something that is nice, thick and hearty.
You also have to add the thinly sliced cabbage in this for the crunch. Every sandwich needs crunch factor (I have been known to open my sandwich and stick in some chips in there for this very reason).
Make a tray of these for home, a party, your friend that had a baby, potluck or simply to binge watch TV. You’re going to love them!
Home Style Chicken Sandwiches
- Total Time: 35 minutes
- Yield: 5 people 1x
Ingredients
- 1 lbs of chicken strips
- Sour dough bread
- Butter
- 2 heaped tbsp of mayonnaise
- 2 heaped tbsp of Greek yogurt
- Pepper to taste
- Pinch of garlic power
- Thinly sliced cabbage
- Thinly sliced cucumbers
Chicken Marinade
- 2 tbsp Olive oil
- Salt to taste
- Pepper to taste
- 1 tsp white pepper
- 1 tsp of garlic powder
- 1 tsp of parsley
- 1 tsp of Italian herbs
- 1 tsp of cumin
- 2 tbsp of soy sauce
Instructions
- Marinate your chicken and fry it in a pan until cooked. Takes 6-10 mins.
- Chop fine and let the chicken cool
- Butter both sides of the bread and toast on a griddle.
- Let the bread cool on a cooking wire rack so that it doesn’t get soggy.
- Once cool place in a bowl and add the mayo, Greek yogurt and seasonings.
- Adjust seasonings.
- Spread a light layer of the chicken mixture over the toasted sour dough bread
- Top with cabbage and cucumber
- Spread a light layer of mayo on the top toast and cut into your desired shape
- Place a toothpick in between to secure the sandwich
- Prep Time: 15 mins
- Cook Time: 20 mins
