Just going to sit here with my noodles trying to make sense of cryptocurrency. You can serve this dish with any choice of protein. Serves 6.
PrintSpicy Udon Noodles

Ingredients

- 2 packets of Udon noodles – I used the Ka-Me brand and the weight of one package was 7 Oz. So in total you need about 14 OZ. These were pre cooked. But you can buy uncooked and cook them according to the instructions on the package.
- 3–4 cloves of chopped garlic
- 3 whites of a spring onion chopped
- 1/2 inch of ginger sliced thinly
- 1 packet sliced mushrooms
- 1 large purple onion cut in to cubes (you can use any vegetable you’d like)
Sauce:
- 2 tbsp of soy sauce,
- 2 tbsp dark soy sauce
- 2 tbsp oyster sauce
- 1 tbsp of Sambal Olek (please google) or any other chili sauce
- 1 tbsp ketchup
- 1 tbsp hoisin sauce
- 1/2 tsp of garlic powder
- 1/2 tsp of cracked black pepper
- 1 tsp of brown sugar
- 1 tsp of toasted sesame seed oil.
Instructions
- In a deep wok or frying pan, place it over medium high heat. Cover it with its lid and let it preheat.
- After 4-5 mins, remove lid, add 2 tbsp of any oil and add in the garlic, spring onion and ginger. Fry for 3 minutes and add in the vegetables. Heat must be high.
- Remove after 5 mins with a spoon and add 1 tbsp of any neutral oil and add in the sauce ingredients.
- Let it start bubbling and add the cooked noodles. Heat must be high. Toss to coat the noodles.
- Add in the vegetable mix. Mix to combine.
- Serve hot with a choice of protein or on its own.
