Have you ever felt that someone who admits that they use a Boxed Mix to make a dessert skipped multiple steps just for an easy way out? I’m here to say – I am a proud box mix user!
I will use a boxed mix anytime it makes my life easier. Throw in some added mix ins and you have yourself a personalized creation! Fatima Rana, as I call her Ranay, collaborated with me this week to take a boxed mix and elevate it. She made an amazing cobbler, recipe up on her feed. I made cookies out of a boxed brownie mix. It’s a very easy recipe, one you can do with the kids (and you all know how much I despise baking with my kids but this one is so mess proof)

- Total Time: 50 minutes

- 1 box of any brownie mix
- 1/2 cup of melted butter
- 1 egg
Instructions
- Mix all these ingredients in a bowl.
- DO NOT follow the instructions on the box. You can add in mix ins like chocolate chips, peanut butter chips etc.
- Once the ingredients are combined. Use an ice cream spoon and scoop on to a cookie sheet lined with parchment paper. Make sure the cookies aren’t close to each other. They will spread.
- Bake for 8 mins.
- Remove and let them cool for a few minutes before transporting them to a wire rack. The outsides of the cookies will be crumbly and the inside soft and chewy. Recipe up in my highlights marked “brownie cookies”
